When the weather gets hot, all I want is cold food. This rice bowl is an easy and healthy way to cure those warm weather cravings.
Brown rice makes up the base of the bowl and edamame provides a protein boost, while carrots top it off with some crunchiness. Personally though, my favorite part of this bowl is the seaweed.
GimMe roasted seaweed snacks add just the right amount of flavor to the rice bowl. Place the sheets in the bowl and snack on them as you eat the rice or slice them up and mix them in. easy rice bowls
Ingredients
- 1 cup brown rice (I just use Minute Rice)
- 1 cup frozen edamame, thawed
- 2 large carrots
- 1/2 cup green onion/scallions
- 1 package GimMe seaweed snacks, flavor of choice
- 2 tbs toasted sesame oil
- 2 tbs rice vinegar
- 1/2 tbs minced garlic
- Pinch of salt
Directions
Cook the rice according to package directions. Since I use Minute Rice, I bring two cups of water to a boil and then add the cup of rice. Let it simmer for about five minutes or until the water is absorbed.
Slice the two large carrots into strips or use a vegetable peeler to speed up the process. In a bowl, combine the brown rice, edamame, sliced carrots, green onions, sesame oil, rice vinegar, garlic, and pinch of salt. Stir until well combined.
If incorporating the seaweed snacks into the rice bowl, slice them into strips and mix them with the rice.
Serve cold or at room temperature. The rice bowl also works well on top of baby spinach or arugula or mixed with some grilled chicken.
