When I say frozen, I mean REALLY frozen. This key lime pie is an icy, delicious summer treat and the coolest solution to this constant heat wave we seem to be having.
This fiveĀ ingredient pie is tart enough to make you pucker up, but of course you can control the tartness. I just have a love affair with sour tastes and key limes.
The beauty of this pie is that it can be adapted so many ways. Make it vegan by using coconut yogurt instead of Greek, control the sweetness, and if you can’t find key limes, any fruit can be juiced, squeezed, or mashed into this pie.
Fun fact: did you know that key limes are more yellow than green? After extensive research, I learned that most key lime pies are a yellow/white color and are actually dyed green! ButĀ don’t worry, this uses REAL key limes without any artificial coloring.
Ingredients
- 8-10 key limes
- 1 cup low-fat or fat free Greek yogurt
- 1 can coconut milk (lite or regular)
- 2-3 drops of liquid stevia OR 1/4 cup honey or maple syrup
- 1 pre-made graham cracker pie crust
Directions
- In a bowl, whisk together the coconut milk, yogurt, and sweetener.
- Before slicing the limes, take 2 or 3 and use a zester to add the zest to the bowl.
- Cut and squeeze all of the limes into the bowl. Whisk well.
- Pour the filling into the pre-made pie crust. Place in the freezer for 6-8 hours or overnight.
- Let thaw and serve!
