With a sudden burst of fall weather here, it was only appropriate that I make a recipe that encapsulated all of the fall flavors! I tried a new overnight oats recipe, Gingerbread, and it was definitely the most delicious combination I’ve made to date. I let it sit overnight, then heated it up in the morning, topped it with raisins, and it was the perfect healthy and cozy way to start to my day.
Ingredients
- 1/2 cup rolled oats
- 1/2 cup almond milk (sweetened or unsweetened, whichever you prefer)
- 1 tsp chia seeds
- 1/4 cup almonds (or any nut of your choice!)
- 1/2 tsp cinnamon
- 1/2 tsp ginger (didn’t have any, so I improvised and used allspice)
- 1 tsp molasses (use blackstrap for the most health benefits)
- 1 tsp vanilla
- Optional: 2 tsp maple syrup (I opted out of this since I try to eat low sugar and it’s plenty sweet with molasses. Choice is yours though!)
Directions
- Combine all ingredients together in a mason jar or sealed container, let sit overnight
- In the morning, serve cold or heat up in the microwave. Top it with whatever you’d like, I used raisins!
