For my first post, I thought I’d share my latest culinary adventure. Being at school and stuck in a dorm, I rarely get the chance to cook. That’s why when I’m home for break, I find myself spending many hours in the kitchen preparing healthy meals for my family. This past spring break, I tried out a recipe that I found on Pinterest for cauliflower crust pizza. It was way easier than I expected and gives you the opportunity to tweak it just how you want it.
Here’s the recipe for the cauliflower crust! When you make the dough, don’t be surprised if it seems really liquidy at first. When you bake it, it should become harder and more like a dough. The crust may not be as sturdy at traditional crust, so you may have to eat the pizza with a fork. Still just as delicious! And if you want to make this recipe even healthier, use egg whites instead of eggs! It’ll be pure protein without the cholesterol.
When the crust came out of the oven, I let it cool for a minute and gathered pizza sauce, arugula, goat cheese, tomatoes, and parmesan. I spread some pizza sauce on the crust, topped it with the arugula, tomatoes, and goat cheese, and then layered the toppings with parmesan (can you tell I love cheese?). I stuck the pizza in the oven for another 2 minutes then took it out and let it cool. It was delicious, healthy, and incredibly easy.
