So I opened a jar of pumpkin puree a week ago and have been trying to use it all up, hence the crazy amount of pumpkin flavored recipes. Hopefully this will be the last one for a little while….
This chia seed pudding is amazing and tastes just like a pumpkin pie, but healthy. I had it for breakfast because chia seeds are amazing sources of fiber and protein, both perfect to start my morning off right. Of course, you can have it for dessert/lunch/dinner/snack and modify it how you like.
Ingredients
- 1/2 cup of almond milk
- 2 tbs pumpkin pie puree
- 2 tbs chia seeds
- 2 tsp cinnamon
- Pumpkin pie spice
- 1 tsp maple syrup or honey to sweeten (optional…I didn’t use any, but depending on how sweet you want it, use as much or as little as you like).
Directions
- Combine the pumpkin puree, almond milk, sweetener, and spice in a bowl or mug until thoroughly combined. To speed things up, use a blender.
- Pour in the chia seeds and mix well.
- Let the mixture sit refrigerate overnight. If you want it sooner, then a couple hours will suffice.
- Top with fruit, granola, or toppings of choice.
