Full of antioxidants, iron, vitamin K, and various other nutritional qualities, kale is one of my favorite vegetables. While my favorite superfood may taste delicious, there are only so many times I can eat it sautéed, boiled, or steamed before I want to cry from the monotony.
I decided to get a little creative in the kitchen last night and try roasting the hearty greens. These aren’t kale chips, but they have a slight crunch and an amazing smoky flavor. The best part? They only take 15 minutes to make!
Ingredients
Serves 2
- 4 cups kale, thick stems removed
- 2 tbs olive oil
- 2 tsp cumin
- 2 tsp garlic powder
- 1 tsp salt
- Onion slices (optional); as many as you choose
Directions
- Preheat the oven to 375
- Combine all ingredients until the kale and onions are thoroughly coated
- Lay out on parchment paper on a baking sheet
- Bake for 15 minutes, stirring occasionally
- Serve warm
