The Lazy Girl’s Apple Crisp

Who doesn’t love a good apple crisp?  Let’s be honest though, when that craving comes on do you really want to start chopping up dozens of apples and compiling a long list of ingredients to mix together?  Save the real apple crisp for a Saturday when you have nothing to do.  This Lazy Girl Apple Crisp makes a single serving size and can be prepared and baked in just about 30 minutes.  Your tummy and tight schedule will thank you.

Ingredients

  • 1 apple (honey crisp, fuji, or gala work well)
  • 2 tbs honey
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 1/4 cup rolled oats
  • Sprinkle of unsweetened coconut (optional, but delicious)

Directions

  • Preheat oven to 350 degrees
  • Dice apple into small squares
  • Place in a small, oven safe bowl or dish
  • Add in the rest of the ingredients and mix until well combined
  • Bake for about 20 minutes, longer if you want the apples extra soft
  • Top with plain or vanilla greek yogurt, vanilla froyo, or vanilla ice-cream
  • Enjoy!
