If I had it my way, I would recipe test cookies all day. Especially vegan ones because you can eat all the dough (guilty as charged). This weekend, I procrastinated my homework by making some healthy oatmeal raisin cookies because I had been craving them FOREVER. I used my usual vegan cookie recipe and tweaked it a little, but it’s still full of whole grains, natural sweetener, and healthy fat. Try not to eat them all at once.
Ingredients
- 2/3 plus 1/2 cup spelt flour
- 1/3 plus 1/4 cup oat flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/2 cup raisins
- 1 1/2 tsp cinnamon
- 4 tbs maple syrup or honey
- 6 tbs almond milk or milk of choice
- 2 tbs coconut oil
- 1 tsp vanilla
Directions
- Preheat the oven to 375 degrees.
- Mix together the dry ingredients.
- Add in the wet ingredients and stir well, adding more almond milk if it’s too dry.
- Roll together small balls and flatten on a cookie sheet.
- Bake for 9 minutes.
- Eat them all.
