I love a good salad and rarely stray from having it for lunch, but lately I’ve just been so sick of eating it everyday. This week, I decided to mix things up and forego the lettuce in exchange for a different type of salad.
This salad combines my favorite grain, farro, with the summer tastes of zucchini and peas. Chicken apple sausage provides protein and feta adds some extra flavor. This recipe took me no time to throw together and I have more than enough for lunch, and maybe even dinner!
Feel free to swap the zucchini for any vegetable of choice and add more vegetables if you want an extra dose of nutrients.
Zucchini Farro Salad
ingredients
- 1 bag Trader Joe’s 10 minute farro
- 4 medium zucchinis, sliced into rounds and halved
- 1 pack of precooked chicken apple sausage
- 1 cup frozen peas, defrosted
- 1 cup chopped sun dried tomatoes
- 1/4 cup lemon juice
- 2 tbs olive oil
- 1 tbs garlic
- Salt and Pepper to taste
- Feta (optional)
Directions
Bring water to a boil in a small pot. Add the farro and cook for 10 minutes or until tender. Set aside.
In a large pan, heat the olive oil on medium heat. Add the garlic. When the garlic begins to brown, add the zucchini and salt and pepper to taste and saute for about 8-10 minutes or until soft. Add to the farro and stir.
Chop the apple sausage into round and saute for five minutes with some nonstick spray or until lightly browned. If you’re in a rush, just heat them in the microwave and skip this step. When done, add the sausage to the farro and zucchni mix.
Combine the farro mix with the remaining peas, sun-dried tomatoes, and lemon juice and mix well. Top with a sprinkle of feta. This salad can be served hot or cold.
